Dates Lemon Pickle

Dates lemon pickle is a tasty side dish to make at home. Combination of dates and lemon makes it very delicious pickle recipe.

Ingredients

Lemon – 2 no’s (large)

Sugar – ¾ tsp

Salt – as required

Gingelly oil – 1 tbsp

Mustard seeds – ½ tsp

Dry red chilly – 1 no

Ginger – a small piece (sliced)

Garlic – 5 clove (sliced)

Dates – 10 no’s (chopped)

Kashmiri chilly powder – 1 tbsp

Fenugreek powder – a pinch

Asafoetida – ½ tsp

Hot water – a little

Vinegar – 1 tbsp

Salt – as required


Method to Prepare Dates Lemon Pickle

1. Steam lemon for 8 – 10 minutes until soft. Cool and cut each lemon in 4 – 8 pieces.

2. Transfer in to a bowl add salt, sugar to pieces, mix well and keep aside for 2 days or can keep for 2 hours. .

3. Heat pan add gingelly oil. Splutter mustard add dry red chillies and saute well. Add sliced ginger and garlic and saute well. Fry till golden in color.

4. Add chopped dates to it. Cook until soft on low flame.

5. Add chilly powder, fenugreek powder, asafetida and sugar and saute well.

6. Add hot water and vinegar to it. Boil for 2 minutes until thick. Switch off flame and keep aside for cooling.

7. Add lemon pieces. Mix well. Cool down and transfer in air tight container.

8. Heat some oil in pan. Cool it and pour above pickle.

Your dates lemon pickle is ready. Use it after 2 – 3 days. Refrigeration avoids spoiling and can keep for many days.
